  2. Prepare 3 eggs

  5. Take Diced tomatoes

  1. Peel the yam, cut into pieces and wash thoroughly.
  2. Pour in pot and add water to reach 1/4 of the pot. Add 1tblsp of Sugar and 1tspn of salt. Boil for 10-15mins until cooked. Set aside!
  3. Add oil in a frying pan, add the diced onions, scotch bonnet, tomatoes and stir. Add seasoning and spices and fry for a minute.
  4. Break eggs in a bowl and beat thoroughly.
  5. Pour eggs in the frying sauce and Cover, Do not stir yet. Leave covered for a minute.
  6. Open and stir. Let it fry for a minute and then serve.
