The ingredients needed to make Achari Egg:
  1. Make ready 3 eggs
  2. Make ready 2 tbsp oil
  3. Prepare 1/2 tsp cumin seeds
  4. Take 1/4 tsp fenugreek seeds
  5. Get 1/2 tsp fennel seeds
  6. Take 1/2 tsp nigella seeds /kalonji
  7. Make ready 3 tsp hung curd
  8. Get 2 green chilli slit
  9. Make ready 4 dry red chilli broken
  10. Take 1 onion finely chopped
  11. Take 1 tsp ginger garlic paste
  12. Make ready 1 tomato finely chopped
  13. Prepare 1/2 tsp turmeric powder
  14. Prepare 1 tsp red chilli powder
  15. Make ready 1/2 tsp coriander powder

  17. Prepare As required Salt
  18. Take 1 tsp lemon juice
  19. Get 1/2 tsp mustard seeds
Instructions to make Achari Egg:
  1. First hard boil the eggs, peel them and and make 3-4 slashes and keep aside.
  2. Take the Mustard seeds, Cumin seeds, Fenugreek seeds, Fennel seeds, Nigella seeds (Kalonji), dry red chillies and coarsely grind it.
  3. In a bowl add the eggs, slit green chillies, curd, ground masalas, salt, mix well and keep aside while you prepare the other ingredients.
  4. In a pan heat the mustard oil.Add the chopped onion and fry until translucent.
  5. Add the ginger garlic paste and saute for a min. Add the tomatoes and saute until it turns mushy.
  6. Add the turmeric powder, chilli powder and coriander powder, mix well and cook for a couple of minutes till the oil leaves the sides of the pan.
  7. Add the marinated eggs, mix well gently without breaking the eggs and continue to cook on a medium heat for around 2-3 mins stirring in between occasionally.
  8. Add some water and bring to a boil, cover the pan and simmer on a low heat and cook for another 5-10 mins stirring occasionally.
  9. Switch off the heat, add the lemon juice, mix well. Serve hot.
