  2. Get SPICY PASTE:
  3. Take 2-3 stalks lemongrass (need plenty), pounded & knotted or
  4. Take 1 tbs lemon grass paste (see photo)
  5. Get 3 garlic cloves
  6. Make ready 1 small white onion, chopped
  7. Get 1 medium red onion, chopped
  8. Get 1 inch ginger, sliced thinly
  9. Take 1 inch turmeric, sliced (or 2 tsp ground turmeric)
  10. Get 3 pc fresh Red chili, deseeded, sliced
  11. Prepare 1 tbs Sriracha Chili sauce
  12. Prepare 1 tbs Rice Bran oil for to grind the herbs
  13. Make ready 6 Macadamia nuts
  14. Make ready OTHER INGREDIENTS:
  15. Get 6 pc Kaffir lime or lemon leaves
  16. Prepare 1 tomatoes diced
  17. Take 1 cup Lemon basils/Thai basils
  18. Prepare 1 1/2 cups water
  19. Make ready 1 kaffir lime juice
  20. Make ready 3/4 tbs soft brown Sugar,
  21. Take 1 tsp salt & grounded black pepper
  22. Take 1 tbs Cornflour to thicken
  23. Prepare 2 large buttons mushrooms, chopped roughly
  24. Get 1 cup Rice Bran oil to fry the chickens
  25. Make ready Hot steamed Jasmine Rice

Steps to make Spicy Basil Chicken Casserole๐Ÿ˜‹๐Ÿ‡ฎ๐Ÿ‡ฉ๐Ÿค๐ŸŒถ๐Ÿ…๐Ÿœ๐Ÿฟ:
  1. In a food processor: put white & red onions, lemongrass, garlic, ginger, fresh tumeric or ground turmeric, Macadamia nuts, red chili, Siracha chili sauce & 1 tbs vege oil to loosen the texture and blend until the texture is a bit chunky, not smooth!!. Heat the wok, and 2 tbs Rice Bran oil then add the spicy paste from the blender, and sautee' them, then add kaffir lime leaves and lemongrass stalks (or paste) until cooked & fragrance.
  2. Add 1 1/2 cups Rice Bran oil and put the chicken in hot oil, mix and cook until chicken changed colour just a little brown on both sides but don't overcook. Add 1 1/2 cup water, 3/4 tbs sugar, tomatoes pieces, salt, pepper and the fresh mushrooms and mix well. Cook until the gravy is reduced and the chicken is almost done, then add in lemon basils leaves, lime juice and cornflour. Mix well. Taste the salt, then turn off the heat, transfer to a serving dish. Sprinkle on top with the green onions.
  3. Garnish on top Chicken with 5 Lemon Basils leaves. Serve with hot steamed Rice and with a cup of hot Jasmine Tea from Indonesia.๐Ÿ˜™๐ŸŒถ๐Ÿ…๐Ÿœ
