Roselle juice, known as bissap, wonjo, dabileni, tsobo, zobo, or sobolo in parts of Africa, sorrel in the Caribbean, and agua de Jamaica in Mexico, is a drink made out of the flowers of the Roselle plant, a variety of Hibiscus. Zobo is made from the the dried calyces (sepal) of the hibiscus plant flower. Zobo leaves are also called; sorrel, flor de Jamaica and rosemallow. Although the drink is known by different names all over the world (Zobo, Hibiscus tea, bissap, wonjo), the flavor profile is very similar.

Steps to make Sorrel or Hibiscus or Zobo Drink:
  1. Put leaves in a pot and Wash the leaves in cold water
  2. After 5 mins of cooking on medium heat pour the remaining ingredients add more water then let it boil for almost 30mins to allow the leaves and pineapple to be soft .
  3. After 30mins of cooking turn off and set aside to cool down
  4. When cool, sieve out the juice from the leaves and other ingredients leaving only the juice in pot
  5. At this point you can also add any artificial flavour of your choice…some people might choose to add sugar I wanted mine a bit natural so I added honey and a bit of artificial flavour and stirred it
  6. Pour into a bottle or a water jug and refrigerate
