Steps to make Mini Pancakes (Ebleskiver):
  1. In a large bowl sift together the flour, sugar, baking powder and baking soda.
  2. Make a hole in the center and pour in the melted butter, milk, eggs and extract.
  3. Mix until smooth.
  4. Spray an ebelskiver pan with cooking spray or grease using tissue and place on a stove set to medium heat.
  5. Once the pan is warm, spoon about 2 tablespoons of batter into each well.
  6. Spoon enough batter on top to seal the pancakes once the surface begins to bubble (you can pipe in nutella before sealing) and flip over the pancakes using two skewers or spoon so that the cooked side is facing up.
  7. Cook until the bottom turns golden brown.
  8. Transfer the pancakes to a plate and enjoy!
