The ingredients needed to make Ofada Sauce:
  1. Prepare 1 tablespoon locust beans
  2. Take Assorted meat
  3. Prepare Stock fish
  4. Make ready 1 tablespoon grounded Crayfish
  5. Get Large green bell pepper
  6. Make ready Onion(chopped)
  7. Get Scotch bonnet
  8. Take Palm oil
  9. Make ready Seasonings
  10. Prepare to taste Salt
  11. Take Little nutmeg

Ofada rice is a name for heritage varieties of rice grown in south-west Nigeria. It is used in a variety of dishes. Ofada rices are mostly blends, and some of the rice varieties in the blends are not indigenous to Africa; however, they usually also contain African rice. Ayamase stew also called Designer stew or Ofada sauce is a green bell peppers stew, which happens to be a delicacy common in the western part of Nigeria.

Steps to make Ofada Sauce:
  1. These are my ingredients
  2. Add Seaosoning the assorted meat with onion,salt,pepper,until it's tender
  3. Combine all the peppers and blend
  4. Place the pepper, mix in a pot and cook until the liquid dries and the mixture thickness
  5. Add palm oil into a pot,cover the lid and place on heat to bleach,on a low heat for 5mnts
  6. After 5mnts,put off heat and let the oil cool completely, before u open the pot.
  7. Bring the pot back on a medium heat,add onions and blend locust beans,fry until translucent
  8. Add the pepper, mix and stir fry continuously for 10mnts,until u notice patches of oil at the top
  9. Season the sauce with some seasoning cubes,add grounded crayfish,stir then cover to cook gently for 5mnts more
  10. Bring the cooked meat(assorted) into the sauce and stir fry,this should take about 10mnts
  11. Note.if the sauce appears to thick, add about half cup of the stock, and stir to combine.Ur ofada sauce is ready.U can serve with ofada rice.Enjoy.
