The ingredients needed to make Spicy githeri:
  1. Take 100 g boiled maize
  2. Make ready 150 g boiled beans
  3. Take 2 medium sized tomatoes, pureed
  4. Make ready 1 large onion, chopped
  5. Take 1 tbsp ginger garlic paste
  6. Prepare 1 green bell pepper, chopped
  7. Make ready 1 chilli beef cube
  8. Make ready 1 tbs vegetable oil
  9. Take 2 large carrots, peeled and chopped
  10. Prepare 1/2 kg potatoes, peeled and chopped
  11. Make ready 1 royco cube
  12. Get salt and peper
  13. Prepare Dhania, chopped

This one stays true to its roots and is composed of white beans, pigeon peas, corn, curry rice pilaf and kachumbari slaw. The crispy slaw was a nice contrast to the hearty beans. Africa served up a curry rice pilaf dish with white beans, pigeon peas, and kachumbari slaw. I really enjoy the flavor combination.

Steps to make Spicy githeri:
  1. Heat your sauce pan on a medium heat and then add the vegetable oil followed by the onions and cook them until they just turn translucent.
  2. Add the ginger garlic paste and cook for about a minute.
  3. Add pureed tomatoes and royco cube, stir, cover and reduce heat to a low simmer. Cook for about 5 minutes or until the mixture reduces and thickens.
  4. Add carrots and potatoes. cover then simmer for 5 minutes before adding the maize and beans.
  5. Add salt and freshly cracked pepper to taste.
  6. Cover and simmer for about 10 minutes for the sauce to thicken and all the flavors to come together.
  7. Finally, add the dhania and hoho and simmer for just a minute. Turn off the heat and serve.
