  1. Get 2-1/2 pound pork roast boneless
  2. Prepare 2 tablespoons extra Virgin olive oil
  3. Make ready 5 cloves garlic whole

  5. Make ready 1 quart water
  6. Make ready 1 cup long grain rice
  7. Make ready 16 ounces drain canned pinto beans
  8. Get 1 teaspoon whole leaf oregano
  9. Make ready 1 large tomato
  10. Prepare 1/2 teaspoon thyme
  11. Prepare 1 teaspoon ground sage
  12. Make ready 1 cup diced orange bell pepper
  13. Make ready 1 tablespoon dehydrated onions
  14. Make ready 1 teaspoon seasoned salt
  15. Prepare 1 teaspoon fresh ground black pepper
  16. Prepare 1/2 cup finely ground cornmeal
Steps to make Maize Porridge and Pork Stew:
  1. Sear the roast dry 3-1/2 minutes per side.
  2. Turn searing on all sides. Add olive oil and garlic.
  3. Add the rice and sauté in the drippings and olive oil.
  4. Add the water. Bring to a boil.
  5. Add the pepper, thyme, and oregano. I washed the tomato and put into the boiling liquids for 20 seconds.
  6. Take the tomato out and remove the skin and dice.
  7. Add the tomato and salt to the pot. Boil for 15 minutes.
  8. After 15 minutes take the pork out and slice against the grain very thinly.
  9. Add the pork back in the pot along with the dehydrated onions, and cook.
  10. After 10 minutes add the pinto beans.
  11. Cook on low heat for 20 minutes stirring occasionally.
  12. Add the cornmeal. Stir in well fish out the garlic cloves.
  13. Smash the garlic cloves add back in. Stir well and simmer till thickened for about 7 minutes. Cover and let rest for 7 more minutes.
