  6. Make ready 1/2 cup oil
  7. Take 3/4 cup sugar

  9. Prepare 1 teaspoon vanilla
  10. Make ready 1 teaspoon lemon juice (or zest)
  11. Get 1/4 cup milk
  12. Prepare 1 cup ripe and soft mashed pawpaw/papaya
  13. Get Toppings: 1/8 cup of raisins and 1/4 cup of shredded unsweetened coconut

Thanks to their sweetness, ripe pawpaw can be eaten raw, but the sweet, custardy tropical fruit is a star ingredient in smoothies and various desserts like pawpaw ice cream, moist pawpaw quick bread, and even pawpaw puddings. Combine sugar and butter in a bowl; beat together until smooth. Stir in flour, walnuts, baking soda, salt, and baking powder. Pour into the prepared loaf pan.

Steps to make Pawpaw (Papaya) Loaf Cake:
  1. First start by preheating your pot on a medium heat then greasing and flouring your baking pan (I used two mini loaf pans)
  2. Mix the dry ingredients, flour, baking powder, baking soda, salt and cinnamon and set aside.
  3. Pour the oil and sugar in a bowl and mix till the sugar dissolves
  4. Add the eggs one at a time, whisking after each addition.
  5. Add the vanilla and lemon juice and mix.
  6. Add the dry ingredients to the wet ingredients in 3 steps, first half of the flour, mix, add the milk and mix, then add the remaining part of flour and mix.
  7. Fold in the mashed pawpaw
  8. Pour into the prepared pans, top with shredded coconut and raisins
  9. Bake for 35 - 40 minutes in the preheated pan till a toothpick inserted comes out clean.
  10. Bring it down, allow to cool and then serve. It is best enjoyed the next day when the pawpaw flavour really comes out.
