  2. Make ready 2-3 tablespoons Mirin
  3. Prepare 2 tablespoons Sugar
  4. Prepare 2 tablespoons Soy Sauce *you might need more or less
  5. Make ready 1-2 small pieces Fresh Ginger *sliced into thin strips
  6. Prepare 1 tablespoon Toasted Sesame Seeds

One of my favourites is 'Tsukudani'. 'Tsukudani' is commonly small fish, shellfish or seaweed cooked in Mirin, Sugar and Soy Sauce to preserve the ingredients. Fish Tsukudani Sardine, Saury, Bonito, Tuna It uses fish caught in Japan. It's an elegant Ajiwai that can't be made with canned food. It is convenient as a side dish when there is not enough nutrition in the table, or for drinking.

Steps to make Baby Sardines 'Tsukudani':
  1. Taste the Dried Sardines you are going to use. If very salty, you need to remove salt by pouring boiling water over them first.
  2. Cook Mirin, Sugar, Soy Sauce and Ginger in a saucepan over medium to low heat. When it started bubbling, add the fish.
  3. It is easy to burn, so carefully cook constantly mixing untill the sauce is thickened. Add Sesame seeds and combine all well.
