Make ready 1 cup pudina leaves
Take 1 cup coriander leaves

Prepare 2-3 garlic cloves

Get Half tsp black salt
Prepare Half tsp regular salt
Take For Tamarind Chutney:
Take 200 gms Tamarind
Get 200 gms Jaggery
Take As required black salt
Get As per taste regular salt
Get 1 tsp Cumin Powder
Take 1 tsp red chili powder
Take Half tsp garam masala powder
Prepare For Assembling Ragda Aloo Tikki Chaat:
Take As required barik sev
Get As required chopped onions
Get leaves As required chopped coriander
Take As required chaat masala
Steps to make Ragda Aloo Tikki Chaat:
For Tikki: Firstly, in a big bowl add boiled and mashed potatoes, bread crumbs and soaked poha and combine together. Now add salt and red chili powder to it. Mix well to make a Dough. Now pinch a ball size portion from this dough and start making Tikkis.
Heat ghee on a tawa and start shallow frying Tikkis one by one till they are nice and crisp. Aloo Tikkis are ready.
For Ragda: Soak one cup of white peas overnight.In a pressure cooker heat oil, add cumin seeds let it crackle, add Asafoetida, add ginger garlic green chilli paste, saute for a minute and add chopped onions. Saute till onions are golden brown then add chopped tomato give it a good mix. Cook till tomatoes are soft and mushy.Now add washed and Soaked white vatana in the cooker. Add turmeric powder and chhole masala give it a good mix. Add salt and water. pressure cook it for 4-5 whistle
For Green Chutney; In a blender jar add, pudina leaves, coriander leaves, green chillies, garlic cloves, ginger, salt, lemon juice and Cumin Powder. Blend it in a smooth Puree. Green Chutney is ready.
For tamarind chutney:Soak for 2-3 hours tamarind to make it soft and mushy.Now grind and strain the soaked tamarind two to three times to get a clear tamarind extract.In a kadhai add tamarind extract and jaggery. Cook till Jaggery is completely melted and mixed with tamarind extract.Now add salt, garam masala, red chilli powder and cumin powder. Switch off the flame. Tamarind chutney is ready. Let it cool down completely and store in an air tight container in refrigerator.
Assembling Ragda pattice.
Keep ready all the ingredients - ragda, Tikkis, chopped onions, chaat masala, Barik Sev, tamarind chutney, pudina chutney, curd (optional).
