  1. Take Tomato
  2. Make ready scotch bonnet

  8. Make ready Dry fish
  9. Prepare Palm oil
  10. Take Local rice

Funny enough, the Ofada sauce got it name from the local rice it is usually served with (Ofada rice), the sauce itself is called Ayamase. The pairing is however so perfect that when people talk about ofada rice they automatically associate it with the ayamase stew. Ofada Rice and sauce is a Nigerian favourite. The combination of meats and peppers adds complex flavours that keeps everyone wanting more.

Instructions to make Ofada sauce with rice:
  1. Slice tomato, onion, meat, cow skin and grate scotch bonnet. Wash fish with warm water and set aside.
  2. Put palm oil in pot and place it on fire. When the oil is hot, pour in sliced onions, tomatoes and grated scotch bonnet. Fry for about 10mins and add the sliced meat, cow skin and fish. Add locust beans, salt to taste and seasoning. Fry for 5mins. Add very little of the meat stock, cover it to steam for 2mins and put out fire.
  3. Wash your local rice and sieve out stones where necessary. Boil with little salt and serve with ofada sauce. I added fried plantain and boiled eggs to mine, you could do same. Bon Appétit 😋
