Miyan Kubewa (dried okro soup), Miyan Wake (bean soup a.k.a gbegiri), Dafaduka (jollof rice), Kosai, (bean fritters a.k.a Akara) I am sure there must be more. Miyan Taushe is usually served with Rice Masa or Tuwon Shinkafa. Tuwo Shinkafa (Rice Meal) is a Northern delicacy that is prepared with rice. It is surprisingly easy to make.

Steps to make Tuwan shinkafa with Miyan Aleyawu:
  1. Put pot of water on fire, cover and allow to boil
  2. Pick any particle in the rice, wash thoroughly and pour the rice into the pot of boiling water and cover.
  3. Allow the rice for some minute and check to see the level of softness, if the water level is down and its not soft add boiled or warm water enough to cook the rice to soft and cover. Low the fire to avoid burning
  4. Once the water is dry and the rice is soft, use turning stick to mash the rice together, keep turning until smooth.
  5. Turn of the fire. Using swallow packing spoon, scoop the tuwo into white leather use for swallow and wrap sideway, continue the process until u wrap all.
  6. Wash the green vegetable properly with salt and then cut it with knife on chopping board.
  7. Put the vegetable inside strainer for the water left to drain out.
  8. Wash and pound pepper, red chilli pepper and cut onions together
  9. Put pot on fire, add Palm oil, allow to heat a bit and add the pounded ingredients and stir for a while. Add maggi, salt, stir and add little water(I used the stock from the already cooked chicken). Add the chicken then cover to boil.
  10. Add the chopped vegetable and stir to mix together, reduce the flam of the fire and cover for 5minute to simmer.
  11. Once done turn off the fire.
  12. Dish out the tuwo on plate with the vegetable soup.

Tuwo Shinkafa (Rice Meal) is a Northern delicacy that is prepared with rice. It is surprisingly easy to make. It can be eaten with any Nigerian native soup. However, I always recommend that you eat it with Miyan Taushe (Pumpkin soup) which I have a bias for. Tuwo shinkafa is a unique Nigerian dish consisting of rice flour or soft, short-grained rice and water.
