The ingredients needed to make Vegan Red Lentil Dhal:
  1. Prepare 275 g red lentils
  2. Make ready 1 onion, finely diced
  3. Take 3 garlic cloves, finely diced
  4. Take 2 tsp ginger, grated
  5. Take 2 tsp ground cumin
  6. Take 2 tsp turmeric
  7. Prepare 2 tsp garam masala
  8. Make ready 1/2 tsp paprika
  9. Take 1 tsp coriander, chopped
  10. Get to taste Salt
  11. Take 1 can coconut milk
  12. Make ready 500 ml vegetable stock
  13. Prepare 1 can chopped tomatoes
  14. Take 2 tbsp Olive oil
  15. Prepare Lemon juice, to garnish
  16. Get Chapatti bread, to serve
  17. Take Rice, to serve
  18. Prepare Spinach, to serve

Steps to make Vegan Red Lentil Dhal:
  1. Heat the olive oil over medium/high heat.
  2. Add the onion, garlic and ginger. Fry until golden brown.
  3. Add all the dried spices and cook for another minute or so. Stir regularly.
  4. Next add the tomatoes, vegetable stock, coconut milk and lentils.
  5. Reduce heat to medium and cook for 15 minutes or until the mixture has thickened.
  6. Add the coriander and season with salt to taste.
  7. Serve the dhal with rice, spinach and chapatti bread. Garnish the dhal with a drizzle of lemon juice just before serving or plate a slice of lemon to be drizzled over.
