Instructions to make Egg sauce:
Wash and chop the tomatoes and onion. In a large pan add the vegetable oil and allow to get hot.add chopped onion and stir fry for 3mins.add grated scotch bonnet and garlic paste.stir and add the tomatoes. Grate the fresh ginger on top. Stir and cook for 10mins.
Stir and add salt,coriander powder and 2 stock cubes. In a bowl crack the eggs and whisk. Add a pinch of salt and beat again.pour the eggs on the sauce and cover to cook for 30seconds.
