The ingredients needed to make Vegan Quesadillas:
  1. Make ready 2 tortillas
  2. Make ready 1/2 chopped onion
  3. Take 1 clove garlic, minced
  4. Prepare 1/2 tin mixed beans, cooked
  5. Get 1/2 tin mushroom, cooked
  6. Prepare Spice mix:
  7. Take 1 tsp onion powder
  8. Take 1 tsp cumin powder
  9. Get 1/2 tsp dried oregano
  10. Get 1/4 tsp smoked paprika
  11. Get 1/2 tsp chilli paste
  12. Get to taste Salt & Pepper
  13. Make ready 1 batch vegan cheese sauce

These tasty Vegan Quesadillas are filled with caramelized sweet onions, zucchini or summer squash and wilted squash blossoms (optional). Served with a flavorful Roasted Poblano & Pumpkin Seed. They're also oil-free, gluten-free and high-protein. These quick quesadillas are packed with flavor and can be made vegan too!

Instructions to make Vegan Quesadillas:
  1. Heat 1/2 tbsp oil in a pan, add 1 tbsp soy sauce, onion, garlic, pepper, and mushrooms and fry over medium heat for 3-4 minutes. Add the mixed black beans, and spice mix and fry for a further 3-4 minutes.
  2. Make a batch of my easy vegan cheese sauce and spread some of it in an even layer on one tortilla. You can use any other vegan cheese of choice.
  3. Add a layer of the veggie mixture (about 4 tbsp) and place another tortilla on top.
  4. Transfer to a (lightly oiled) skillet and cook for about 2-3 minutes, flip and cook from the other side until both sides are nicely browned and toasty. Cut into 4 pieces and enjoy hot!

To add chicken, add a cup of cooked shredded, diced, or grilled chicken to the quesadillas after adding the veggies. These Easy Cheesy Vegan Quesadillas with Homemade Cheese are absolutely delicious!
