The ingredients needed to make Achari Gosht:
  1. Make ready 500 gm mutton
  2. Take 1/4 cup mustard oil
  3. Prepare 1/2 onion,finely chopped
  4. Make ready 2 tsp ginger paste
  5. Prepare 2 tsp garlic paste
  6. Prepare 3 tbsp yogurt, heaped
  7. Get 1.5 tsp kashmiri red chilli powder
  8. Get 1/2 tsp turmeric powder
  9. Make ready 2 tomatoes finely chopped
  10. Get 3 green cillies,slit lengthwise
  11. Take 1 pinch asafoetida
  12. Make ready 1/2 tsp brown sugar
  13. Prepare 10-12 curry leaves
  14. Get to taste salt
  15. Prepare as needed dash of lemon juice
  16. Prepare as needed chopped coriander leaves for garnish
  17. Make ready pickle spices (dry roast until the aroma is released. grind to a slightly coarser than fine powder)

  19. Take 1 tsp cumin seeds
  20. Take 1 tsp fennel seeds
  21. Prepare 1/2 tsp fenugreek seeds
  22. Prepare 2 cloves

  24. Take 4 dry red chillies
  25. Get 1/2 tsp carom seeds
  26. Prepare 1/2 tsp aniseed
  27. Get 1/2 tsp whole black pepper

  1. In a wide bottomed, nonstick pan, heat the mustard oil to smoking point. Turn off and let cool completely.
  2. In a bowl mix together yogurt,warter,salt,brown sugar,kashmiri red chilli powder and turmeric powder.
  3. Place the pan with the cooled mustard oil on medium heat.Add asafoetida and onions.Saute and cook until onions turn brown.
  4. Add curry leaves,ginger paste,garlic paste,green chillies and ground pickle spices.Saute for 5 minutes.
  5. Add mutton and saute on high heat until mutton starts to turn brown.
  6. Turn heat to simmer, add the yogurt-spiced water,cover with a tight fitting lid and cook until mutton is 3/4 done.
  7. Add the chopped tomatoes, mix through,cover and cook until mutton is tender and cooked through.
  8. Remove lid,increase heat to high and cook until all the water has dried up and the desired consistency is reached.
  9. Add a dash of lemon juice.
  10. Remove to a serving dish,garnish with chopped coriander leaves and serve hot along with Indian flatbread.
