The ingredients needed to make Lime Coconut Jasmine Rice:
  1. Take 1 cup jasmine rice
  2. Take 3/4 cup coconut milk (not low fat)
  3. Prepare 3/4 cup water
  4. Take 1 pinch of salt
  5. Get 1 zest from 1 lime
Instructions to make Lime Coconut Jasmine Rice:
  1. Add rice, coconut milk,water and salt in saucepan and bring to boil. Cover with lid and simmer over med-low heat until liquid is absorbed, about 15 minutes.
  2. When rice is done, fluff with fork and stir in lime zest.
