Palm oil: Palm oil gives ofada stew its unique taste, especially when bleached (more on that later). Habanero pepper: The traditional ofada stew is made with scotch bonnet peppers, but you can use them interchangeably. Iru (fermented locust beans): I use iru in some of my African soups like my okro.   1. Take 3 _4 Semi ripe tomatoes
  2. Get 1 small bunch of red chilli peppers
  3. Make ready 1 small basket of Peppers
  4. Make ready 1 small basket of Red bell peppers
  5. Prepare 1 big onions
  6. Take I wrap of locusts beans/ iru
  7. Make ready Assorted meats
  8. Take Brown cow skin wash and cut
  9. Get 6 hard boiled eggs
  10. Get 3 cooking spoonful of palm oil slightly bleached
  11. Prepare Salt
  12. Get 2 stock cubes

Ofada Stew aka Ayamase Stew: The Designer Stew used in eating the famous Ofada Rice. Ofada Rice and stew is a Nigerian meal native to the Yorubas but in recent times, everyone, especially those in Lagos and environs, has been bitten by the Ofada Rice bug. Looking back, this was one of the first recipes that I posted. In fact, it was the second recipe on my Bella Naija BN Cuisine feature.

Steps to make Ofada Stew/ palm oil stew:
  1. Wash the meats and pomo (cow skin) thoroughly and season according with Salt, stock cube, onions, garlic and pepper and boil till almost tender.
  2. Wash the tomatoes, different peppers and opinions.. blend but dont nment it smoothly.
  3. Place a lot on fire, Add the palm oil and allow it to heat up till it becomes almost bleached, Add in some chopped onions. (I like onions so I add some despite the fact that onion is already in the blended tomatoes.)
  4. Pour in the semi smooth but blended tomatoes a d peppers into the pot and stir. Allow it to fry for a say 5_10 mins depending on how much stew you are making.
  5. Once it the oil start a to show on the surface, pour in the almost tender boiled meats with the cow skin, add salt and iru and if it needs water,.You can add plain water if the meat stock wasn't enough… The aroma of the iru at this point is simply divine..šŸ¤£šŸ˜‚šŸ˜…
  6. Stir it and allow to cool till the water content is almost dried… This is the perfect time to add in the already peeled hard boil eggs and allow to simmer on low heat… Stir gently and taste for salt and your delicious Ofada Stew is ready.
  7. Serve with its usual companion stoneless Ofada Rice with some fried plantain..

Looking back, this was one of the first recipes that I posted. In fact, it was the second recipe on my Bella Naija BN Cuisine feature. While he was prepping for the stew, I forgot to tell him to bleach the palm oil. Ofada stew (sauce) is made with a combination of green peppers and red peppers, then assorted meat, hard-boiled eggs, and palm oil.
