  1. Mix semolina and AP flour. Make a well in the middle and pour your eggs in it. Sprinkle salt on the eggs.
  2. Mix everything, knead until elastic and smooth. Add flour if dough is sticky.
  3. Cover with plastic wrap for 30 minutes.
  4. Divide dough into sections. Roll each section at a time very thinly on a floured surface. Most of mine were thicker than they should've been.
  5. Use a zigzag cutter and cut into mini rectangles. Smaller than mine.
  6. Pinch the middle of the rectangles & bring the 2 opposite sides in contact with one another.
  7. Repeat for all the dough. Allow to dry.
  8. Cook for 3-5 minutes in salted boiling water.
