  9. Make ready 2 tsp kaju chopped

  12. Take For masala paste:
  13. Prepare 2 tsp oil /butter
  14. Take 2 big onion chopped
  15. Get 2 big tomatoes chopped
  16. Take 8-10 garlic peeled
  17. Prepare 2 inch Ginger chopped
  18. Take 8 Almonds
  19. Take 8 Kaju
  20. Make ready 2 green chillis
  21. Take For curry preparation:
  22. Get 2 tsp oil
  23. Prepare 1/3 tsp haldi
  24. Prepare 1 tsp kashmiri chilli powder
  25. Get 1/2 tsp cumin powder
  26. Make ready 1 tsp kasuri methi
  27. Make ready to taste Salt
  28. Prepare 1/3 tsp garam masala
  29. Make ready 1/2 tsp dhania powder
  30. Get 1 small bowl Fresh cream
Instructions to make Malai Kofta:
  1. For koftas:
  2. Grate potatoes and panner together.
  3. Add salt, red chilli powder, garam masala and coriander leaves (if available).
  4. Add 2 tsp Maida and knead it into a dough. If the dough is still soft,then add one more tsp of maida.
  5. TIP: Keep boiled potatoes in fridge to reduce it's moisture
  6. Take a small portion of dough and roll it into a small bowl. Press inside with thumb to make a bowl shapem
  7. Stuff with kaju and raisins and seal the edges and roll it into a ball.
  8. TIP: Dust the balls with little maida so that the ball does not disperse while frying.
  9. Then heat oil in a pan. Once the oil is heated,reduce the flame to low medium.
  10. TIP: If the oil is not hot enough,then the balls will disperse while frying.
  11. Put 4-5 balls at a time. Once they are golden brown flip to the other side and fry till they are golden brown.
  12. TIP : Do not flip the koftas too often.
  13. Drain off the koftas and keep aside.
  14. Masala paste preparation.
  15. Take 2 tsp oil or butter in a pan. Add almonds, kaju. Chopped onion, garlic and ginger and green chilli.
  16. Roast for 2 min till the onion turns it's colour.
  17. Then add chopped tomatoes and roast for 2-3 min till the tomatoes becomes soft.
  18. TIP: Add a little salt so that tomatoes becomes soft a bit earlier.
  19. Turn the gas stove off and let it cool.
  20. Then grind it into a smooth paste.Keep aside in a bowl.
  21. TIP: Do not add water
  22. For curry preparation:
  23. Heat 2 tsp oil in a pan.
  24. Add haldi, chilli powder, cumin powder,dhania powder, garam masala.
  25. Cook all the masalas for 1 min in low medium flame.
  26. Add the prepared masala paste.
  27. Keep stirring for 3 to 4 min in low medium flame.
  28. Once the oil oozes out,add water.If the gravy is too thick, add more water.Boil for 3 to 4 min.
  29. Add salt.
  30. Add fresh cream. Mix well.
  31. Cook for 1 min and add kasuri methi and a pinch of garam masala.
  32. Add ½ cup water and mix well adjusting consistency as required.
  33. Curry is ready.
  34. Let the curry cool down a little.
  35. Finally, pour the curry over kofta and malai kofta is ready to enjoy.
  36. TIP: Do not add koftas in hot curry as they may break.
