Heat up a large frying pan with the oil. Add the drained lotus root slices in a single layer. Cook until the lotus root slices start to change color - they turn a bit translucent looking. To stir-fry with lotus root, cut the vegetable crosswise into quarter-inch slices, and cook in a small amount of oil over medium-high heat for two to three minutes.
