  1. Get Rice,palm oil,onion, eru(daddawa),pepper, lettuce,cucumber
  2. Prepare Sweet pepper, dry fish,crayfish, salt, seasoning cube and spices

Instructions to make My native palm oil jollofrice:
  1. Wash and parboil the rice and keep aside.
  2. Soak the dry fish. - Grate pepper and sweet pepper (tattasai)wash and slice 4-5 onions big ones.keep all aside
  3. Pound garlic and ginger with crayfish also keep it aside.
  4. Put the pot on fire, pour palm oil fry for 5mins,add the slice onion and stir. - Add pepper, garlic, ginger and crayfish stir it all and add the water that will be enough to cook the rice.
  5. Wash the fish and put into the pot - U can remove the fish bones or put it without removing the bone. - Season with salt seasoning cube - Stir and cover it to boil and for fish to cook well for 15mins.
  6. After that 15mins add the parboiled rice stir and slice 1big one and add stir all together and cover it to cook. - That's all for the rice.
  7. For the salad its simple - Wash the lettuce and use ur clean hand to tear it. - Wash cucumber and strip it. - Wash the sweet pepper remove the seed and strip it too. - Cut and wash the onion slice it round.
  8. Walah…!native rice is ready serve hot and give it a beautiful plating and garnishing.

Someone asked me on Instagram if Iru can be added to this, and my response was, yes you can, as many Yoruba people who cook this Palm oil rice add Iru, but the Efik's don't.
