Native Jollof Rice, also known as Iwuk Edesi or Palm Oil rice is a rich Jollof rice style rice dish. It's known as Iwuk Idesi by the Efik people of South eastern Nigeria. Iwuk Edesi is quite easy to prepare and is absolutely delicious but unlike Jollof Rice which is prepared with Vegetable oil. Jollof rice is Nigeria's national dish.

Steps to make Native jollof rice@zahra's cuisine:
  1. Perboil rice and add some salt to taste
  2. Add palm oil in a pot and leave until hot not bleached
  3. Add onions,tomatoes, pepper,scotch bonnet,ginger,garlic and spices
  4. Leave to cook for 5min
  5. Add perboiled rice into sauce
  6. Stir well and add some eater that will cook the rice
  7. Add smoked fish
  8. Cover the pot and allow to cook for 3to5minutes
  9. Add spinach leaves
  10. Cover and allow to steam
  11. READY TO SERVE…

Iwuk Edesi is quite easy to prepare and is absolutely delicious but unlike Jollof Rice which is prepared with Vegetable oil. Jollof rice is Nigeria's national dish. The other name for the dish is benachin, meaning one pot in the native language of the Wolof people who created it. Although it is a Nigerian dish with Senegalese origins, it can be found all over West Africa with some variations in the ingredients, and it's believed.
