  1. Prepare 4 large Irish potatoes

  1. Peel and wash the potatoes, then cut them into small pieces, season them with abit of salt, then boil until cooked tender.
  2. Drain the water and allow to cool completely. - Mush the potatoes, until smooth, then add in the parsley, lemon juice, chopped green chillie, red chille powder, green bell pepper, onion, ginger and garlic and the lemon zest. - At this point you can add in a little more salt if need be.
  3. Mix everything together thoroughly to ensure  all the ingredients are well incorporated.
  4. Using your hand, or a scoop, take some of the mixture and form into balls, size depending on preference.
  5. Set on a tray and let sit for 10-15 minutes or in the refrigerator overnight.

Meanwhile. - - In a bowl, add in the flour, season with some salt(remember we've used salt in the potato balls, so be careful not to add too much in the flour), add the turmeric powder and black pepper. Whisk to mix, then add in the lemon juice and gradually add water as you try to find a semi-thick consistency.
  7. Once done, set oil in a frying pan to heat o er moderate heat then take the potato balls and coat in the flour mixture then deep fry for approximately 2 minutes. Remember we only need to the coating (flour) to cook, the potato is already cooked.
  8. Drain off excess oil, serve and enjoy
  9. Can be enjoyed with some chutney or tamarind sauce
