Steps to make Jollop Rice:
  1. Place a pot on medium heat, heat up oil. Add in sliced onions and cooked meat. Fry until slightly brown.
  2. Add in pepper mixture, sty fry. Cover and cook for 4mins.
  3. Add in stock,thyme and curry, seasonings and salt. Stir. Cover and simmer for 10mins. Taste and adjust for seasoning.
  4. Stir in drained parboiled rice. Reduce heat to medium low. Add in your washed potatoes.
  5. Seal pot with lead. Leave to cook for 20mins. No need to stir or open.
  6. Stir in sliced onions and leave for 5 mins. Turn off heat. Leave to rest for some mins before serving.
