  1. Prepare 3 cups long grain rice
  2. Get 1 cup meat stock
  3. Prepare 1 fresh mackerel fish
  4. Get Habanero pepper
  5. Take 1 cup palmoil
  6. Get 2 tablesooons of grounded crayfish
  7. Get 1 bulb of onion
  8. Take 2 stock cube
  9. Get 7 pieces scent leaves
  10. Prepare to taste Salt

Native Jollof Rice, also known as Iwuk Edesi or Palm Oil rice is a rich Jollof rice style rice dish. It's known as Iwuk Idesi by the Efik people of South eastern Nigeria. Iwuk Edesi is quite easy to prepare and is absolutely delicious but unlike Jollof Rice which is prepared with Vegetable oil, Palm oil is. Native jollof rice or palm oil rice or iwuk edesi originates from the Southern part of Nigeria and differs from the conventional jollof rice.

Steps to make Palm oil native jollof rice:
  1. Parboil your rice then set aside
  2. Blend your pepper and half onion then keep for later use
  3. Heat your palmoil for few seconds then add chopped onion and saute, next add the blended pepper and onion the fry for few minutes, add stock cube and salt as your fry
  4. Pour the meat stock to the fried pepper then top up with water enough to cook the rice, then allow to boil, at this point add the parbkuked rice, taste and adjust the seasoing with salt and stock cube then cover the pot and start to cook, half way cooking add the crayfish and allow to cook till done and almost dry
  5. Chop the scent leaves then add to the pot, allow to dry then stir and bring down

Iwuk Edesi is quite easy to prepare and is absolutely delicious but unlike Jollof Rice which is prepared with Vegetable oil, Palm oil is. Native jollof rice or palm oil rice or iwuk edesi originates from the Southern part of Nigeria and differs from the conventional jollof rice. As this is Native Jollof rice, what better way to serve it than to use a clay pot. Someone asked me on Instagram if Iru can be added to this, and my response was, yes you can, as many Yoruba people who cook this Palm oil rice add Iru, but the Efik's don't.
