The ingredients needed to make Leftover Rice Uttapam:
  1. Make ready 2 cup leftover rice
  2. Get 1 cup sooji
  3. Take 1/2 cup curd
  4. Prepare 1/4 tsp baking soda
  5. Get 1/2 cup onion chopped
  6. Prepare 1/2 capsicum chopped
  7. Make ready 1/2 cup tomato chopped
  8. Take 2 green chilli chopped
  9. Prepare 1inch ginger chopped
  10. Get 1/2 tsp red chilli powder
  11. Take 1/4 tsp black pepper powder
  12. Get to taste salt
Instructions to make Leftover Rice Uttapam:
  1. In a mixer jar add rice, curd blend it and make a fine paste
  2. Transfer into a bowl, add suji mix well, add little water if batter is very thick. Cover, keep aside for 15 minutes.
  3. In another bowl transfer onion, capsicum, tomato, ginger, green chilli, salt, black pepper powder, red chilli powder, mix well.
  4. Add baking soda in batter and mix well.
  5. Heat uttapam pan, add batter on it, spread vegetables mixture on it, press gently.
  6. Sprinkle little oil on it for crispiness. Cover it and cook for 2 to 3 minutes on medium flame.
  7. Release sides with stapula and flip it, cook for another 2 minutes so that it get golden brown (Do not cover)
  8. Leftover Rice Uttapam are ready. Serve hot with tomato sauce or nariyal chutney
