  1. Make ready 20-25 Baby potatoes
  2. Make ready 1 tablespoon Kashmiri chilli powder
  3. Take 1 teaspoon garam masala
  4. Get 1 tablespoon oil
  5. Get Gravy ingredients:-
  6. Get 1 cup chopped tomatoes
  7. Take 1/4 cup cashews
  8. Get 1 tablespoon sesame seeds
  9. Prepare 1 tablespoon oil
  10. Prepare 2 tablespoon melon seeds
  11. Make ready 2 tablespoon peanuts
  12. Take 1 teaspoon ginger paste
  13. Get 1 teaspoon chilli paste
  14. Prepare 1/4 teaspoon turmeric
  15. Get 1 tablespoon cumin and coriander powder
  16. Prepare 1/4 teaspoon kasuri methi
  17. Take 1 teaspoon garam masala
  18. Get 1/2 cup yogurt
  19. Make ready 1/4 teaspoon asafoetida
  20. Make ready leaves Finely chopped coriander

The baby potatoes are cooked in tomato-based gravy which has a flavour of whole spices. This is quick and easy to prepare using fewer easily available ingredients. Potato is one of my favorite vegetables from childhood. If I never have to grow up and think of calories, carbs, work out and all that stuff - I would be very happy to live on potatoes forever.

Steps to make Dum aloo without onion and garlic:
  1. Boil potatoes in pressure cooker for 3-4 whistles. Let potatoes to cool. Peel of the skin and prick the potatoes with a tooth pick.
  2. In a pan heat 1 tablespoon of oil and add the potatoes. Shallow fry and keep tossing in between on medium heat until golden brown. Once they are golden brown turn the heat to low and add salt, red chilli powder and garam masala. Mix well ensuring masala is coated evenly to each potato. Turn off the gas and set aside.
  3. In a pan heat 1 tablespoon of oil. Add in asafoetida green chillies and ginger, sauté for few seconds. - Add melon seeds, cashews, peanuts and sesame seeds and cook for about 2 minutes. Add chopped tomatoes and salt and mix well.
  4. Cook until the tomatoes are all cooked. - Turn off the gas and let it cool down. - Once its cool blend in a blender to fine paste. Transfer back into the pan and let it cook for further minute. Add turmeric powder, red chilli powder, cumin and coriander powder and garam masala.
  5. Cook this gravy for about 4 minutes. Add yogurt and kasuri methi and mix well. Add the potatoes to the gravy and mix well. Add 1/2 cup of water and cook for further 2 minutes.
  6. Transfer in a serving bowl and garnish with fresh coriander. Serve hot with roti, paratha, puri or rice.
