  1. Take 2 onions
  2. Get 2 carrots
  3. Get 1 olive oil
  4. Get 50 grams butter

  7. Make ready 500 grams minced lamb
  8. Get 1 tbsp flour
  9. Get 1 lemon
  10. Prepare 1 stock cube
  11. Get 800 grams floury potatoes
  12. Prepare 200 ml single cream
  13. Take 50 grams cheddar cheese
  14. Get 200 grams peas

Instructions to make Shepherd's pie:
  1. peel onions and carrot and cut into roughly 1 cm pieces
  2. fry gently in olive oil and butter until soft and tender
  3. add salt and pepper, and thyme and bay leaves
  4. add the peas and cook for another 5-8 minutes
  5. add the mince and flour, and crumble in the stock cube. let cook until the mince has cooked out it's liquids.
  6. once the mince has browned, add water (alternatively beer) until the mince is covered, let simmer for 30 minutes. story occasionally
  7. preheat the oven to 180°c and start peeling the potatoes
  8. quarter the potatoes and cook until soft
  9. mash the potatoes with a splash of milk and a good knob of butter ( if desired, add one egg yolk too)
  10. salt to taste and put aside
  11. pour in the cream to the mince mixture and stir. let boil for a couple of minutes until mixture thickens up a bit
  12. pour mixture into a casserole pan, grate some cheese on top, and lastly dollop potatoe mash to cover the mixture
  13. put the pie in the middle of the oven and let cook for 40 minutes
