  1. Mix all your ingredients in your filo pastry into a dough
  2. Role it out into a circle
  3. Place the dough into a pirax
  4. Cook for 10 minutes on 180* so it bubbles slightly take it out and set aside
  5. Cut up all your ingredients for your filling
  6. Fry for a few minutes on a hob with a bit of honey
  7. Mix up all the rest of the filling in a bowl
  8. Pour the vegetables into the liquidy filling and stir well
  9. Pour the filling into the filo pastry
  10. Bake for 45 minutes and in the last 10 minutes put on low steam
  11. Now it is ready to eat

The flavor is all still there. Or, make it for a weekend brunch and impress the homies. A very tasty crustless vegetable quiche, perfect for brunch, and substantial enough for lunch or dinner. Leftovers are great, warm or cold. I love flaky crusts - who doesn't!
