  13. Prepare 2 tablespoon green peas(I used frozen)
  14. Prepare 2 tablespoons blanced and minced spinach
  15. Take 4-5 cherry tomatoes (halved)
  16. Prepare 1 teaspoon chilli flakes
  17. Get 1/2 teaspoon kasuri methi
  18. Prepare 1 tablespoon olive oil
  19. Prepare to taste Salt
  20. Prepare 2 tablespoons grated cheese
  21. Take For the liquid filling(egg mixture)
  22. Make ready 2 eggs
  23. Get 1/2 cup cooking cream(you can use fresh cream)
  24. Prepare 1/2 teaspoon chilli flakes
  25. Make ready 1 pinch nutmeg powder
  26. Make ready 1 pinch salt
  27. Make ready 1 tablespoon chopped coriander leaves

It tastes wonderful on its own and also tastes amazing topped with an herby tomato sauce, such as the Ratatouille Tomato. Take the chickpea batter from the fridge and add it to the vegetables. Mix until the veggies are well-coated. Transfer the batter-coated vegetables to the pan with the dough.

Instructions to make Chickpea Vegetable Quiche:
  1. To make the pie crust, first put together chick pea flour, wheat flour, chilli powder, kasuri methi and salt  into a bowl.
  2. Mix together. Add in ghee and mix together with your finger tips. Make a breadcrumb like crumbly mixture.
  3. Now make a rough dough with a little bit of chilled water.
  4. Cover and leave the dough in the fridge for 15 minutes.
  5. Keep   pie dish(7″size)ready by brushing some oil.
  6. Take the pie dough out of the refrigerator after 15 minutes  and roll it to 1/4th inch thick  round disk.
  7. Now transfer the sheet to the pie dish and spread by pressing them on sides and bottom of the dish.Trim the sides.
  8. Prick the base of the pie with a fork so that it will not puffed up while baking.
  9. Now cut the baking paper or foil into rounds and place it on the base of the pie.
  10. Spread some dry beans like rajma/kidney beans over the butter paper/foil. This will prevent from swelling up the base of the pie crust while baking.
  11. Preheat oven to 180 degrees C for 10 mins.
  12. Bake the pie crusts for 15-20 minutes (until the side of the pie turns a little reddish).  This is called blind baking.
  13. After cooling, remove the butter paper/foil and dry bins.
  14. Now for the filling, chop the vegetables thin long strips. Also chop onion.
  15. Heat 1 tablepoon oil in a non-stick pan and add in chopped onion. Saute until onions become translucent.
  16. Also add in green peas,corn and minced spinach.
  17. Stir well with salt,  chili flakes, nutmeg powder and kasuri methi  for more 2-3 minutes.
  18. At last add in cherry tomatoes. Remove from heat.
  19. Take the baked tart and spread grated cheese at the base of the tart.
  20. Spread the prepared fillings over the cheese.
  21. Break 2 eggs in a bowl.Beat well with a fork and add 1/2 cup of  of cream, chilli powder, nutmeg powder, chopped coriander leaves and salt.
  22. Now pour this mixture over the filling of the pie.
  23. Keep them  again in the preheated oven at 180 degrees C and bake until a little golden color.  I baked for 20 minutes.
  24. Delicious and healthy quiche is ready now. Your house will fill with nice aroma of baked quiche.
  25. Cut in triangles and serve warm as snack, side dish for lunch or even as breakfast. You will fill little crunch of the crust with creamy fillings and wonderful flavour.

Mix until the veggies are well-coated. Transfer the batter-coated vegetables to the pan with the dough. Smooth out the top of the quiche to the best of your ability and place in the oven. Chickpea flour does do wonders for creating a cohesive texture, which is something that's often lacking in basic tofu quiches, I've found. So my chickpea tofu vegan quiche is the best of both worlds!
