It comes in different names as some people call it cornmeal fufu or corn swallow. In Hausa, it is called tuwon masara or tuwo. Cornmeal fufu is made from dried corn.

To get started with this recipe, we have to first prepare a few ingredients. You can have corn meal swallow (tuwon masara) using 16 ingredients and 18 steps. Here is how you can achieve it.

  1. Make ready 3 cup cornmeal
  2. Take Water
  3. Make ready Spinach stew
  4. Get Tomato paste
  5. Take Scotch bonnet
  6. Get Onion
  7. Prepare Ginger & garlic
  8. Make ready Black pepper
  9. Take Nutmeg (local type)
  10. Take Locust beans
  11. Prepare Curry
  12. Get cubes Seasoning
  13. Prepare Dry fish or protein of choice
  14. Prepare Stock or water
  15. Get Palm oil
  16. Get Bunch spinach

To prepare tuwon masara you must first allow the maize dry and afterwards you grind or blend it. It is known by different names as some people call it cornmeal fufu or cornmeal swallow. In Hausa, it is called tuwon masara or tuwo. Cornmeal fufu is made from dried corn.

Instructions to make Corn meal swallow (tuwon masara):
  1. In a clean pot, put water place on heat and bring to boil
  2. Sift 3 cups of cornmeal flour into a clean bowl
  3. Divide the mixture into two, use about 1 cup of the portion, mix with water to form a slightly thick paste
  4. Pour the paste over the boiling water on heat. The cinsistency should look like that (as shown in the picture) and allow it to cook for about 2-3min
  5. With a turning stick, pour the cornmeal set aside gradually over the paste on heat. Turn and knead until you have a thicker paste than the initial paste (not to thick)
  6. Mix until smooth. Cover the pot, reduce the heat and alloe it to simmer for few more minute. Scoop or mold and serve with your favorite soup. I served mine with vegetable stew
  7. For the spinach stew; wash your all your vegetables
  8. Heat oil in a pan, add sliced onion, ginger and garlic paste. Saute onion and fry till fragnant. Add your crushed scotch bonnet and onion mixture. Fry for some minutes
  9. Add your tomato paste and fry for 5min
  10. Add your seasoning, spices and locust beans. Stir in very well
  11. Add your stock or cup of water
  12. Wash and soak your dry fish and add it up to the stew. At this point you can add a pinch of baking powder if it taste sour.adjust seasoning to taste
  13. Wash your spinach with salt and water and drain well
  14. Add it up to the stew
  15. Stir in and remove from heat. Do not over cook it
  16. Serve with your tuwon masara and enjoy with your family member.
