  13. Prepare 1 tbsp corn flour/maizena

I decided to go with a triple chocolate muffin because the more chocolate, the better. Break the chocolate into a bowl and heat over a pan of simmering water untill melted. In a separate bowl add the muscado sugar, melted chocolate,butter,milk and eggs and mix well. These Triple Chocolate Fudge Muffins are loaded with cocoa powder, milk chocolate chunks and dark chocolate chunks.

Steps to make Triple Chocolate Muffin:
  1. Sift all dry ingredients. Set aside.
  2. In large bowl, mix sugar and egg. Wisk until sugar dissolved. Add salt, butter, and oil. Mix well.
  3. Add dry ingredients, mix and then add dark chocolate into mixture. Don't over mix. Just until all ingredients combined.
  4. Pour the batter to muffin mould. Just 2/3 part from mould, sprinkle with chocochip and bake in preheated oven (180°C) for 25 - 30 minutes.
  5. Serve and enjoy!
