  1. Make ready 3 eggs
  2. Prepare 2 teaspoons sugar
  3. Take 1/4 teaspoon salt
  4. Prepare Vegetable oil/butter

Steps to make Fluffy Omelette and Fried plantain:
  1. Peel, fry ur eggs and set aside
  2. Separate ur egg white from yolk and place into separate bowls.
  3. Add the salt to the yolk, mix until runny and set aside. Using a fork/hand mixer/ whisk, Incorporate air into the egg white by beating it. Ensure the bowl used is a very dry one
  4. While beating, add ur sugar bit by bit. Do not add at the beginning. The sugar helps to stabilize the foam. I measured out a tablespoon of sugar but I used 2 teaspoons.Beat eggs until foamy and stiff. I whisk for 3- 5 mins.
  5. Heat up a well greased frying pan on low heat. Pour the yolk into it and tilt until it circulate evenly.
  6. When it is almost done, add the egg white on top and level using a spoon or spatula. Cover to cook for 2-3 mins.
  7. When its done, the bottom will be set and the edges of the yolk will be crisp. The egg white will be fairly wet and look uncooked but it won't be loose.
  8. Remove from pan by sliding into a plate. Cut into 2 and place on top each other. Serve alongside with ur fried plantain and u can also eat with ketchup πŸ˜‹. So delicious.
