The ingredients needed to make Okonomiyaki:
  1. Prepare 1/10 th of a cabbage; shredded
  2. Get 1/4 th cup all-purpose Flour
  3. Prepare 1 tbsp Tapioca flour
  4. Take 1 egg
  5. Prepare 1/2 tsp hondashi seasoning
  6. Make ready Beni-shoga; diced (something pickled)
  7. Make ready Leftover rotisserie chicken; diced
  8. Prepare Seaweed; crumbled (or Aonori; if you have it)
  9. Prepare 2 stalks Green onion; diced
  10. Get Japanese mayo
  11. Prepare Okonomiyaki or Takoyaki sauce
  12. Get Dried bonito flakes (Katsuobushi)
  13. Get Sesame seeds
Instructions to make Okonomiyaki:
  1. Mix the cabbage, flours, hondashi, chicken, beni-shoga, half of the green onions, and just enough water to make the batter come together. More cabbage > less batter.
  2. Traditionally, grated Nagaimo would create a bouncy texture; but I used Tapioca flour as a replacement. Should have the same gooey-ish consistency.
  3. In a wide, shallow pan over medium heat, pour in your batter and flatten to create a circle. Heat on both sides til lightly charred. Set on a plate.
  4. Here’s the fun part. Smother the okonomiyaki sauce around the pancake like pizza sauce.
  5. Drizzle the mayo
  6. Top with the seaweed and katsuobushi
  7. ..the rest of your green onions and sesame seeds. Enjoy!
