Steps to make Sindhi Thali:
Chatpate chhole : boil the soaked kabuli Chana's in pressure cooker with 2-3 glasses of water for 15-20 minutes. Drain the extra water after boiling. Take a pan and pour oil in it. Put cumin seeds to crackle. Add green chilli and boiled Chana's to it and give a stir. Mix all the ingredients and pour some water if needed and cover it with a lid. Cook for 5-10 minutes.
Seviyan: take a pan heat ghee in it. Put roasted seviyan and sate until they get golden brown colour and now pour water. Put a pinch of salt. Cook it covered for 5-7 minutes and now add sugar and mix well. Add cardamom powder and again cover it and cook until it leaves the pan easily and ghee comes out. Serve hot with dry fruits garnish.
Sindhi pulao : take a heavy bottom pan put ghee in it. Add free and black cardamom. Few cloves. 1 inch daalchini piece. Cumin seeds. Few black pepper whole. Now add sliced onions and sauté until the onions get golden brown colour. Add green chilli and tomato paste. Sauté for 2-3 minutes. Add dry masalas and mix well. Add 1/2 cup of water and allow the mixture to cook. After5 minutes mash the mixture and add water (double to the rice) approx 4 cups. When water starts boiling add rice to it
Cook uncovered for 5-6 minutes and when you see bubbles on the surface cover it with a lid and slow down the flame and cook for 3-4 minutes or check if the rice is done. Turn off the flame and serve hot. Garnish it with some fresh coriander leaves.
Fried potatoes: take a pan put oil and heat it. Put diced potatoes and add salt according to taste and mix well let them fry till Golden Colour. After that strain out the extra oil and mix haldi, dhaniya powder and red chilli powder according to taste. Put some amchur powder at the time of serving.
