The ingredients needed to make Veg Thali:
Prepare DAL FRY:- 300gm masoor dal
Prepare 1 tomato sliced
Take 2 green chillies chopped into 3
Take Salt as per taste
Prepare 1/2 teaspoon turmeric powder
Prepare For Tempering:- 4 tablespoons cooking oil
Prepare 1 teaspoon cumin seeds
Get 6 nos chopped garlic pods
Prepare 1 sprig curry leaves
Get GOBHI ALOO SABZI:- 250gm cauliflower (Cut into pieces)
Make ready 4 medium size potatoes (cut each into 4 pieces)
Get 1 medium size sliced tomato
Take 1 medium size sliced onion
Get Salt as per taste
Prepare 1 big pinch of asafoetida
Get 1 teaspoon cumin seeds
Take 1 teaspoon garlic paste
Get 1 teaspoon ginger paste
Take 1 teaspoon spicy red chilli powder
Prepare 1 teaspoon garam masala powder
Make ready 1 tablespoon coriander powder
Get 1/2 teaspoon turmeric powder
Take 2 tablespoons fresh chopped coriander leaves
Take 4 tablespoons cooking oil
Prepare tawa bhindi fry:-
Make ready 250 gm ladyfinger (Cut into long)
Prepare Salt as per taste
Take 1/4 teaspoon garam masala powder
Take 1/2 teaspoon red chilli powder
Get 1 teaspoon mango powder
Prepare 3 tablespoons cooking oil
Prepare GALKA:- 1kg galka peeled and sliced
Make ready 1 medium size sliced onion (optional)
Make ready Salt as per taste
Make ready 1 teaspoon cumin seeds
Get 5 nos green chillies chopped
Make ready 1/2 teaspoon turmeric powder
Prepare 1/4 cup cooking oil
Prepare Fruit Custard:- 1/2litre milk
Get 1 &1/2 tablespoon vanilla flavour custard powder
Get 1/2 cup powdered sugar
Get 4 bananas sliced
Take 1 rougly chopped apple
Get 1/2 cup pomegranate
Prepare Peru Kachalu:- 4 sliced guava (peru)
Get 1/3 cup sugar
Make ready 1 teaspoon black pepper powder
Get 1 big pinch black salt
Make ready Zeera Rice:- 500gm basmati rice
Make ready Salt as per taste
Prepare 1 teaspoon cumin seeds
Take 2 tablespoons cooking oil
Make ready Water required
Take Buttermilk:- 2&1/2cups curd
Get 2 cups water
Get 1/3 teaspoon salt
Take 1 pinch roasted cumin powder (optional)
Dal Makhani is the main highlight of the Punjabi Thali. It is a rich dish cooked with Urad dal and Rajma, simmered for quite a long time to get that soft makhamali texture and garnished with cream. So I started this Mega Thali BM with a Simple every day North Indian Vegetarian Lunch Thali, the thali which I have grown up eating, and ending it with this Vegetarian Maharashtrian Thali. Maharashtrian cuisine which I have learned being born and brought up in Mumbai and now married to a Maharashtrian.
Instructions to make Veg Thali:
Method for Dal Fry:- Add masoor dal, salt, tomato, turmeric powder and required water in pressure cooker. Pressure cook it on 3 whistles. Switch off flame and wait till air release and tempered it
Method For Gobhi Aloo Sabzi:- Heat oil in deep wok, splutter cumin seeds and asafoetida. - Add onion and let them cook till it turn into pink. Make fine paste of ginger, garlic, salt, red chilli powder, turmeric powder, garam masala powder, coriander powder by adding little water.
Add tomato in wok and cook it on high flame till tomatoes become dry. Add paste and cook till oil starts floating on all over masala(bhuno). - Add potatoes in it, cover the lid and cooked for 5minutes on low flame. - Add cauliflower and cook till it done. - Garnish with coriander leaves.
Method For Tawa Bhindi Fry:- Heat oil on tawa, add ladyfingers and cook till it become soft. - Add salt, red chilli powder, turmeric powder, garam masala powder and aamchur powder mix it gently. - Cook till it become crisp.
Method For Galka:- Heat oil in deep wok, splutter cumin seeds and green chilies. Add onion and cooked till the little colour change. Add Galka and mix it well. Cook till it get soft. Add salt and turmeric powder in it and mix well, cook it on high flame till the Galka dry/done. In between keep sauteing.
Method For Fruit Custard:- Take 1/2 cup of milk and add custard powder in it and mix till it dissolve. - Boil milk with sugar in saucepan and stir, Add custard paste in boiling milk, keep stirring. switch off the flame and let them cool down on room temperature. - when it cool down add fruits in it.
Method For Peru Kachalu:- Add sugar, black pepper powder and black salt in sliced guava, mix and mash mash and mix, refrigerate for an hour before serving.
Method For Zeera Rice:- Wash basmati rice. - Heat oil and splutter cumin seeds, add water and salt mix it. Add basmati rice and cook till done.
Method for Green SaladTake fresh cucumbers, tomatoes and sliced it.
Method for Buttermilk:-Make smooth buttermilk by adding salt and roasted cumin seeds.
Make wheat flour chapati and fry papad in heated oil.
Delicious veg thali is ready to eat.
