Instructions to make Stuffed & fluffy Kulcha:

  2. Now take 4 cups of refined flour and to that add 2 tsp salt, 3 tbsp curd, 2 tsp oil and the activated yeast mixture and mix it all, add some milk and finally make a dough of it. Cover it and Let it rest at room temperature for 1&1/2 hours.
  3. Now by the time we will prepare the stuffing. For that take 2 - 3 medium sized boiled potatoes, mash it and to that add 1 chopped onion and 2-3 sliced green chillies.
  4. Now to that add salt, red Chilli, garam masala, chat masala and 3 tsp Kasoori methi and mix them all.
  5. Now check the dough. It should have been rised doubled. Now punch the dough to release the Carbon dioxide in the dough and knead it again for 2 mins.
  6. Now divide the dough into 8 equal balls. Take a ball roll it with a rolling pin. Put some potato stuffing, close it and again roll the dough. Add some kalonji and fresh coriander to it.
  7. Now you can either bake the kalcha in the oven for 30 mins at 180°C or cook it on Tawa on a medium-low flame or in an electric tandoor.
