  1. Peel the bananas, & add salt to contain discoloration.
  2. Peel the potatoes. Place both in a medium sufuria/ non stick pot & let it boil for 25- 30 minutes.
  3. Drain the excess water & salt. Mash evenly add a table spoon of butter.
  4. Slice & Fry onions in a small sufuria.
  5. Add in the sliced tomatoes & aubergine, let it cook into a puree.
  6. Add the mince meat & carrots, allow to cook for 10 minutes.
  7. Season the food & allow to the flavor to infuse for 2 minutes, to make a thick soup.
  8. Plate & garnish with coriander, serve while hot.
