  1. Prepare 1 litre fat Milk
  2. Make ready 3 tsp Basmati Rice
  3. Prepare 1/2 cup Sugar
  4. Take 1/2 tsp cardamom powder
  5. Prepare Pinch Kesar
  6. Take 2 tsp cold milk
  7. Get 1/2 tsp Rose Essence
  8. Make ready as required Almond (chopped)

Put Elaichi powder and mix well. Take out Phirni in a bowl and garnish with chopped pistachios or pour Phirni in small bowls and garnish with chopped pistachios. Keep these bowls filled with Phirni in the fridge to cool. Serve chilled and delicious Kesar Pista Phirni for dessert after dinner.

Instructions to make Phirni with Kesar Elaichi:
  1. Wash rice and soak it for and hr. After an hour strain, all the water by strainer keep aside for 15 mins. So all water get strain and rice gets a little dry.
  2. Now take thick bottom pan add milk put it on medium flame. Take small bowl mix Kesar and cold milk keep aside.
  3. Now take grinder add little dry rice grind coarsely.
  4. Once the milk starts getting boiling. Take spatula and start stirring. Let milk get 20%boiled.
  5. Now add coarsely grind rice to it. Stir it well and keep stirring every 2-3 mins. Don't let stick rice at the bottom so keep stirring.
  6. Boil the milk till the rice gets cooked and the texture gets thicker. Once u get the texture add sugar, cardamom powder and Kesar milk.
  7. Mix it well and keep stirring so the sugar gets dissolved. Once the sugar dissolve close the flame.
  8. Now add rose essence. Chopped Almonds. Mix it well. Let it get cool and refrigerate it
  9. After 2-3 hours serve in mud kuhlad. Sprinkle sieve almond and serve.
