The ingredients needed to make Kesar Malai Paneer Curry:
  1. Get 200 gms paneer cubes
  2. Take 2 cups milk
  3. Get 1/4 cup malai/fresh cream
  4. Prepare 1 medium sized onion(roughly chopped)
  5. Take 5-6 garlic cloves
  6. Prepare 1 small piece of ginger
  7. Get 1 green chilli(slit)
  8. Make ready 8-10 cashews
  9. Take 1 tsp cumin seeds
  10. Make ready 1 green cardamom pod
  11. Make ready 1 bay leaf
  12. Get 2 cloves
  13. Make ready 2-4 black pepper corns
  14. Get 1 small stick cinnamon
  15. Make ready 3-4 saffron strands
  16. Take 1 pinch turmeric powder (optional)
  17. Get 1/4 tsp red chilli powder
  18. Make ready 1/4 tsp garam masala powder
  19. Take 2 tsp dried fenugreek leaves
  20. Get to taste Salt
  21. Get 1 tbsp butter

Club Paneer Malai Curry with rice, naan, roti or phulkas. For variation you could add some fenugreek leaves and green peas. I have used dry fenugreek leaves (kasuri methi). Instructions to make Kesar Malai Paneer Curry:
  1. Heat a pan on medium high flame, add 2 glass water and let it boil.
  2. Add in the roughly chopped onion, garlic cloves, ginger, and cashews. Cover and let it - cook for 7-8 minutes on medium flame or till the onion turns soft and cooked completely.
  3. Let it cool down completely. Strain and blend into a smooth paste.
  4. Heat butter in a pan on low medium flame.
  5. Add jeera, bay leaf, cardamom, cloves, black peper corn and green chilli. Sauté for 4-5 seconds.
  6. Add in the onion cashew paste. Sauté and cook for 1-2 minutes.
  7. Add turmeric powder, red chilli powder and garam masala powder. Mix well and cook for 1-2 minutes on low flame.
  8. Add in the cream and mix well.
  9. Now add milk, saffron and dried fenugreek leaves. Mix nicely and cook for a minute.
  10. Add paneer cubes and salt. Cover and simmer it for 5-8 minutes. Or cook till the gravy turns thick, smooth - and creamy.
  11. Garnish with some cream and serve hot with chapati, naan,paratha or jeera rice.
