  1. Take 1/2 kg green pepper (Rodo)
  2. Prepare 4 green bell pepper
  3. Make ready 2 cups Palm oil
  4. Take 2 tbsp Locust Beans
  5. Take 2 Big Bulbs of Onion
  6. Take Diced kpomo
  7. Get crabs
  8. Take 1 kg diced offal
  9. Take to taste Salt
  10. Prepare 2 knorr Cube

Ofada rice is a name for heritage varieties of rice grown in south-west Nigeria. It is used in a variety of dishes. Ofada rices are mostly blends, and some of the rice varieties in the blends are not indigenous to Africa; however, they usually also contain African rice. Ayamase stew also called Designer stew or Ofada sauce is a green bell peppers stew, which happens to be a delicacy common in the western part of Nigeria.

Steps to make Ofada Sauce:
  1. Wash and smoothly blend onions, green pepper, bell pepper and set aside; Wash crabs, offal and kpomo spice and parboil till its tender
  2. Pour in the palm oil, place the pot on heat and allow it stay until it's sizzling hot then pour in the blended pepper and onions
  3. Add the locust beans almost immediately after the pepper and allow it fry
  4. Keep stirring it to ensure it doesn't burn, pour in your diced offal, kpomo,crabs and continue to stir
  5. Allow it fry for another 15mins then add salt and knorr cube and let it simmer a bit. Your Ofada sauce is ready.
