  1. Prepare 2 cup Long grain Rice

Steps to make Goan Tomato Rice:
  1. Wash and drain rice.
  2. Heat oil in a pressure cooker.
  3. Add Cinnamon sticks.
  4. Add washed and drained rice.
  5. Fry for 2 minutes.
  6. Add water and cook for 1 whistle.
  7. Let it cool.
  8. Heat oil in a skillet.
  9. Splutter mustard seeds.
  10. Add cumin seeds.
  11. Add onions and fry, till they turn golden in colour.
  12. Add tomatoes and let it cook well.
  13. Add turmeric powder, ginger-garlic paste, red chilli powder and salt and let it fry for sometime.
  14. Cook it on low flame till tomatoes fully cooked.
  15. Add the rice and stir till the mixture is spread to all the rice.
  16. Squeeze lemon juice on it.
  17. Remove from heat.
  18. Garnish with coriander leaves and serve hot.
