  4. In a bowl, mix the mashed potatoes, salt and all purpose flour. Form a dough. If it is too soft, add 1-2 tbsp flour.
  5. Add 2 tbsp cooking oil. Mix them well, let it rest for 10-15 minutes.
  6. The dough will be homogenized and elastic.
  7. Boil 1 liter water. Add 1 tbsp oil into the water. Bring it to boil. Lower the heat.
  8. While the water boils, form small dough of ball and plunge it into the boiling water. Or you may form the dough first and later boil the water, plunge it into the water.
  9. Simmer the potato ball until they pop up/float on the pot. Cook another 5 minutes. So the potato ball is well cooked in the middle.
  10. Transfer the well cooked potato balls into the plate.
  11. Serve it with condiments: mix 1 tbsp soya sauce, sliced green chili, 1 tsp sesame oil, pinch sugar and pinch chili powder. Other options: serve it with tomato ketchup, Thai sweet chili sauce.
