Ammini Kozhukattai is spicy flavorful rice flour dumplings made specially during festivals like Ganesh Chaturthi in South India. How to make rice flour dough : Heat water in a pan and add salt and oil. Bring it to boil and simmer the flames. Now add rice flour and stir continuously to avoid forming lumps.

  4. In a pressure cooker, add 1.5 cups of water, oil and salt. Pressure cook the water for 1 whistle. Remove the pressure manually and immediately add the rice flour. Mix well. Cover the pressure cooker and keep aside for 15 minutes. Remember it's not on stove.
  5. After 15 minutes open the cooker and knead the dough a little. Remember it's hot so be careful. Make small balls out of this Dough.
  6. Steam the rice dumplings for approximately 10-11 minutes. They should look glossy once done.
  7. For the tempering, heat 2 Tsp oil in a pan add the mustard seeds. Once the seeds crackle add curry leaves. Now add the steamed rice dumplings and the ground masala. Mix well. Yummy and healthy Ammini Kozhukattai are ready.
