  2. Beat eggs in a dry bowl till fluffy. Mash the bananas well in a bowl, add oil and brown sugar. Beat it to a smooth paste,add vanilla essence and mix well
  3. Add half of the flour and half of the beaten egg to the banana mixture, mix well. Repeat with the left over flour and eggs.
  4. Pour the batter in the muffin cups and bake them for 40 mins or till tooth pick inserted comes out clean.
