The ingredients needed to make Rice Krispie and Oat Cookies:
  1. Get 1/2 cup softened butter
  2. Prepare 1/2 cup brown sugar
  3. Take 1/2 cup white sugar
  4. Get 1 egg
  5. Take 1/2 teaspoon vanilla extract
  6. Get 1/2 teaspoon baking powder
  7. Prepare 1/4 teaspoon baking soda
  8. Take 1/4 teaspoon salt
  9. Make ready 1 cup oats
  10. Take 1 cup plain flour
  11. Prepare 1 cup rice Krispies cereal
  12. Take 1/2 cup chocolate (chopped or chips)
  13. Get 1/2 cup mini marshmallows

Crispy Oatmeal Cookies contain rice cereal which adds a delightful crispy crunch to this soft and chewy cookie with wonderfully crisp edges. This recipe uses: Kellogg's® Rice Krispies® cereal. These are by far my favorite Rice Krispie Treat! I love the cookies and cream combo, so why not in Rice Krispie Treats?

Steps to make Rice Krispie and Oat Cookies:
  1. Preheat oven to 180°C and grease baking sheet or pie dish
  2. In a large bowl add butter and both sugars then beat with a whisk until light and fluffy. Add egg and vanilla extract and continue mixing.
  3. Add baking powder, baking soda, salt, oats, rice krispies cereal, chocolate chips and flour then fold everything together with wooden spoon until combined.
  4. Roll into balls / push onto pie dish and bake for 13-15 minutes or until golden brown. (Must be done in batches if cookies and if making into a pie, 3-4 pies can be made). Also remember that the cookies will expand when baking so leave a space between each ball.
  5. Allow it to sit for 5 minutes in the baking sheet/pie dish and then transfer to a cookie rack.
